BOONE — Bar and sandwich shop Lily’s Snack Bar welcomed customers on Sunday, July 28, as the new concept officially opened.
“We’re excited; things have been going well,” said co-owner Seth Sullivan.
Lily’s Snack Bar is owned by The Cardinal co-owners Chris Varipapa, Scott Williford, Sullivan and Cardinal chef Charlie Chakales, who acquired the restaurant space on March 1.
“I think the vibe here is a little bit looser,” Sullivan said. “It’s an opportunity to reach out to a wider population of Boone.”
The space at 455 Blowing Rock Road replaces the former Coop’s Chicken and Beer, Gaijin Noodle Bar and Tank’s Tacos, all of which have operated the space since early 2017.
“I’ve always kind of liked this building,” Sullivan said. “I think it’s cool looking, I think this location is kind of ideal for what we’re doing ... It’s got that laidback shack feel.”
Lily’s will be open Monday through Saturday, 11:30 a.m. to 2 a.m. and on Sunday from noon to 2 a.m. Sullivan said the owners haven’t decided on live entertainment at this time.
